Szechuan pork cooked twice (4 slices American / Chinese 8 servings)
Ingredients
1 pound bacon (fresh bacon)
1 1 / 2 liters of water
2 tablespoons olive oil
1 / 4 teaspoon salt
1 garlic clove, crushed
2 thin slices fresh ginger, finely chopped
1 green pepper, seeded and cut into thin strips
2 onions from Verdejo, cut into 1 / 2 inch
1 tablespoon Chinese brown bean sauce, canned potatoes, mashed
1 / 2 teaspoon sugar
1 tablespoon sherry
1 tspIn combination with hoisin sauce
1 teaspoon water
1 / 8 teaspoon cayenne pepper, in combination with
1 teaspoon oil
Method
Let the whole hog. Bring water to a boil and add pork. Reduce heat, cover and cook about 45 minutes to 1 hour. Drain pork and cut into 1 / 16 to 1 / 8 inch thick slices. The oil in a wok or frying pan to another. With the salt, garlic and ginger for 30 seconds and jump. With pepper and shallot and jump for 30 seconds. Add bean sauce and brown over a jumpminute. Note: Originally, Szechuan pepper oil was used and sprinkled on just before serving. Red pepper and oil are used as substitutes here. Instead, a fresh red chili-pepper, minced, can be added with the green pepper.
Braised Pork (4 American servings/ 8 Chinese servings)
Ingredients
2 pounds boneless fat pork (Ham or shoulder) in a piece
2 tablespoons olive oil
2 slices fresh ginger, finely chopped
1 garlic clove, crushed
2 onions from Verdejo, sliced diagonally 1 inch
6 tablespoons soy sauce
3 tablespoons sherry
3 cups boiling water
1 1 / 2 tablespoons brown sugar
Method
Heat the oil in a heavy skillet. Brown pork on all sides. Add ginger, garlic, shallot and cook for 1 minute. The soy sauce, 2 tablespoons sherry and bring water and let simmer. Reduceheat, cover the pan and simmer 45 minutes, turning the meat every 10 minutes. Add the remaining sherry and the brown sugar and cook 45 minutes to 1 hour, turning the meat every 20 minutes. Slice and serve moistened with a little of the cooking liquid.
